Licorice Ghee + Recipe!

Here’s my latest batch of Licorice Ghee, clear golden goodness!

How to make your own:

First start your licorice tea mixture by adding 1/4 cup licorice powder to 4 cups of water and bring to a boil in a pan. When it starts to boil, immediately turn the heat down to a simmer. Let the tea simmer for an hour, uncovered. Keep it simmering while you prepare a fresh batch of ghee.

Next, you’ll need a fresh batch of ghee. Start with 2 lbs of organic butter, and melt it in a pan at medium heat. As soon as the butter is fully melted, immediately turn the heat down to medium-low; you dont want the butter to burn. If you notice the butter burning you’ll need to turn down the heat. You’ll be cooking the butter at medium-low the entire time, you want to keep the cooking temperature constant the entire time. There is no need to mix or stir your butter while it is transforming into ghee. After about ten minutes the butter should start to bubble. After 20 to 30 minutes the butter should start to smell like popcorn. This means the ghee is almost done. You want to cook the butter until all of the milkfat solids separate. The ghee should be clear and there should be no more milkfat solids coming to the surface. To have better quality ghee you should carefully skim the milkfat solids from the top of the ghee using a spoon right before the ghee is done. Take the ghee of the heat and let it cool for about 5 to 10 minutes. Use 3 to 4 layers of cheesecloth to strain the milkfat from the ghee. I usually place the cheesecloth on a quart sized mason jar and secure with the jar band, then pour the ghee from the pan into the jar carefully.

By now your licorice tea should be complete. Take it off the heat and let it cool. You should have at least 2 cups of the tea.

You will mix the ghee and the licorice tea into a pan. You want to have a 1:1 ratio of tea to ghee. Cook it at medium low heat, stirring it occasionally for the first hour. The ghee will have to cook for at least 90 minutes and likely closer to 2 hours. You will know the medicated ghee is done when it is clear and you can see through it completely. Let it cool for about 10 minutes and then strain the final product through cheese cloth one more time.

Let your ghee fully cool before screwing the lid on; if moisture from cooling gets inside your jar it will affect the shelf life of the ghee. Any water that gets in your jar will make your ghee go bad that much faster. Keep wet utensils away from your fresh, healthful medicated ghee! After a few hours your ghee will solidify and turn a full golden color.

NOTE: You can substitute licorice for another powdered herb as directed by your health practitioner. Common options include triphala, turmeric, lavender, ginger, brahmi, cinnamon, chamomile and others.
